
Winter Orange Salad
INGREDIENTS
- 6 oranges (any combination of oranges, blood oranges or tangerines)
- 1 red onion, thinly shaved
- 50g Greek Feta (creamy)
- Fresh Basil
- Fresh Mint
- Castelvetrano Olives, pitted and halved
- Chuck Hughes' Extra Virgin Olive Oil
- Chuck Hughes White Balsamic Vinegar
- Fresh black pepper
INSTRUCTIONS
Remove skin from the oranges (citrus) with a very sharp knife. Slice the oranges crosswise and lay the slices overlapping slightly on a plate or platter. Place shaved red onions, and olives halves over the oranges. Drizzle with olive oil, balsamic vinegar, basil, mint and top with fresh black pepper.
Can be prepared several hours ahead of time, cover and leave on the counter at room temperature until serving time.
